looking for about 2 to 2 1/2 inch Aunt Sally hinges for cabinet, brush nickel.

Where one lives stress Depot or Lowes has a selection of those types of hinges.

Satin nickel wall plates and outlet plates with brass door knobs and brass hinges?

I'm remodeling my first place and I really like the look of the satin nickel switch plates and market plates. Will these look odd with the current brass door knobs and door hinges? Would satin nickel armaments on the doors make it look better? I found some good prices online

No the effrontery and brushed nickle wouldn't look good. Be conducive to it all one or the other. When I sold my house and had new carpet layed, the decorators told me that even the hem between the carpeted and tiled areas should always match your door components.
